Gluten-Free Chicken Coconut Curry Soup

Gluten-free curried chicken soup is thick and creamy, thanks to Yoplait® yogurt.

Gluten-free chicken stock, no salt added

Lite coconut milk, canned

Paprika
1 1/2 tsp
Turmeric, ground
3 tsp
Gluten-free yellow curry powder
2 1/3 Tbsp
Chili powder
1.50 oz
1 1/2 tsp
Garlic powder

Lemongrass paste

Kosher salt

Black pepper

Cilantro, fresh, chopped

  1. Heat oil in a 5 gallon stock pot and add chicken, onions and celery to sweat for 5 minutes on medium heat.
  2. Add chicken stock, coconut milk and remaining ingredients except yogurt and cilantro.
  3. Simmer for 45 minutes on low heat or until desired flavor/texture is achieved. Remove from heat.
  4. Slowly stir in yogurt and cilantro. Serve immediately or keep warm in a steam well.
